I try to eat and feed my family healthy foods. I think it actually all started when I watched Food Inc for the first time. And then read In Defense of Food. And then watched Fed Up. And then had gestational diabetes during both of my pregnancies. Basically, I got scared into eating healthy.
One of the first things I did was switch to whole-wheat whole-grain everything. When I stumbled upon these whole-wheat biscuits I felt like I made a scientific discovery. And still feel that way every time I make them. (I can't remember where I found it, otherwise I would have totally given credit where credit is due.) And the best part - you can actually relinquish the whole process to your child. Score!

Here is what you need:
2 cups whole wheat flour
4 t. baking powder
1/2 t. salt (shh, don't tell the sodium police, but sometimes I add a bit more and I love it)
4T (1/2) cold butter
1c cold milk
1 messy 3-year-old
Preheat your oven to 450°.
1. Combine flour, baking powder and salt. Mix. (Or in my case, dance around Annika to make sure that everything gets put inside the mixing bowl)
2. Cut the butter into pieces and scatter over the mixture. Mash butter with fork, until the mixture resembles coarse crumbs.
3. Add milk and mix. Knead for a 30 seconds.
4 Put on a floured cutting board and pat out. Then give your kids cookie shapes and let them go at it while you clean up the mess from the floor.

5. Bake for 10-12 minutes on an ungreased baking sheet.
Enjoy feeling healthy! And remember all you knead is bread;)
